Dreamy Broccoli Soup

This healthy Dreamy Broccoli Soup recipe is sweet, creamy, full of anti-inflammatory spices and is incredibly nourishing. The secret ingredient is avocado, which creates the creamy texture and well as adding to the flavor and nutritional value.

Ingredients:

1 tablespoon lemon herb olive oil
1 diced onion
3 minced garlic cloves
1 teaspoon turmeric
1/4 teaspoon ginger
1 large head of broccoli, roughly chopped
Black pepper and salt to taste
4 cups of vegetable broth
1 medium avocado
1 Thai chili (optional)

Directions:

In a large pot start by cooking the onions in the olive oil on a medium heat until the onions start to soften. Add the garlic and turmeric cooking for a further few minutes.

Add the broccoli, ginger, and black pepper cooking for a few more minutes before adding the stock. Cover the pot and simmer for approximately 10-15 minutes, until the broccoli softens.

Allow to cool slightly before blending all ingredients together with the avocado until smooth.

Top with an optional dollop of coconut milk, sprinkle of black pepper, and your garnish of choice.

Enjoy this Dreamy Broccoli Soup as a starter, side dish, or simply stir in your choice of protein such as tempeh or cooked ancient grains like Job’s Tears or pearled barley to create a nutritious and fulfilling meal.
