Simple, Versatile Baked Apples

 

The old saying should be, “An apple a day keeps the doctor away, and tastes great!” Apples are a healthy and delicious food that can be eaten as is or cooked to sweet or savory perfection. Unfortunately, cooking apples can be tedious with the coring and baking in water to avoid burning. But that’s not the case with this recipe for Simple, Versatile Baked Apples.

First, get out of your mind what a baked apple should look like. Then:

Take 5 – 6 medium sized apples of any variety or any combination of varieties.
Peel and cut the apples into chunks.
Melt 2 tablespoons of coconut oil and combine with 1 teaspoon of cinnamon.
Toss cut apple pieces with coconut oil and cinnamon and put in a baking dish.
Place the dish in a preheated 350 degree oven for 20 – 30 minutes or until soft.

Once cooked, you’ve got plenty of options. While warm they are a great side dish for many meals as well as a topping for many cooked cuts of pork and chicken.

For a hot breakfast they are great over hot cereal or pancakes.

You can top them with ice cream for dessert or use them to top a piece of pound cake or a simple sweet bread. They are also great as is for a warm snack.

Once they cool they can also be eaten as is or stirred into yogurt, used as a topping for cold cereal, or even pureed for applesauce. The possibilities are endless!
